Call me crazy, but I love seeing the bananas on the table begin to turn brown. Why? It means it’s banana bread time! The darker, the squishier, the sweeter, the better! Below is my go-to basic Banana Bread or Muffins recipe that can easily be adapted to fit your personal taste and needs. Feel free to toss in some seeds, dried or fresh fruit, chocolate, nuts; go bananas!
Banana Bread Recipe
- 1c. mashed bananas (approx. 4 bananas)
- 2c. flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 2/3c. sugar (brown, white, any variety)
- 1/3c. oil (coconut is my go-to)
- 1-2T. cinnamon
Preheat oven to 350. In a medium bowl, combine dry ingredients and stir. Add wet to dry and stir/mix evenly. For bread, pour batter into loaf pan and bake for 50 minutes. For muffins, pour batter into muffin pan and bake for 20-30 minutes. Your bread or muffins are ready when an inserted toothpick comes out clean. Remove from oven and allow to cool before serving.
